FIRE DESTROY MANY RESTAURANT EVERY YEAR IN SOUTHERN CALIFORNIA AND LOS ANGELES

posted Sep 7, 2015, 5:28 PM by David Khorram   [ updated Feb 9, 2017, 11:18 PM by Sallar Khorram ]

Fire DESTROY many RESTAURANT every year

Year in and year out, we hear in the news about another local
southern California restaurant going up in flames. All too often the cause of the fire is due to grease fires and the restaurant owners lack of cleaning and maintenance of their grease traps, duct work and hood Filtering and roof top.

Don’t fall into the grease trap!

When it comes to fires, a good offense is your best defense. Unfortunately, many busy restaurant operators have trouble finding time to schedule their kitchen exhaust cleaning. But the worst thing you can do is to skip them. Be proactive and establish a cleaning and maintenance plan with a professional hood cleaning company that adheres to National Fire Protection Association (NFPA) standards.

Another very important part of protecting your establishment against grease related fires is ensuring that you select the right type of hood filters. With so many variables, it’s easy to make mistakes like picking the wrong filter for the job. Our Hood Filter Buying Guide takes the guesswork out of which filter to buy and answers common questions about ensuring the proper fit, correct installation, when to replace, and compliance requirements.

Keeping it clean

Just how often do hood systems and filters need to be cleaned? That usually depends on the type of food prepared and the number of hours your vents are in use per day. Most hood filters perform at their best with a daily or weekly cleaning and a professional cleaning of your entire exhaust system is recommended at least 2 – 3 times per year.

It’s important to remember that grease-laden filters are just as dangerous as dirty ductwork. They can also increase your utility costs and affect your health inspection score. However, hood filter cleaning doesn’t have to be difficult. You just need to implement a regular cleaning routine, which will make them last longer and significantly reduce your risk of fire.

Restaurant owners looking for more information on fire safety best practices and requirements may find theNational Fire Protection Association website a helpful resource. There, you can find current information on “NFPA 96: Standard For Ventilation Control And Fire Protection Of Commercial Cooking Operations” as well as research, safety and training information.

Start reducing your risk right away.

There will always be a risk for fire in commercial kitchens, but following a few simple precautions, restaurant owners can easily lower that risk and safeguard their business.

Use approved hoods with grease-tight fittings; make sure you have the right hood filters and make sure they are cleaned on a regular schedule; use a rooftop grease containment system; and schedule routine cleaning and maintenance of your kitchen exhaust system to avoid excess grease accumulation.

For more information on hood filters, hood cleaning service, products and grease containment systems  contact us.

IMPORTANCE OF NFPA COMPLIANCE - Hood Cleaning, Grease Trap Pumping Los Angeles

posted Sep 7, 2015, 4:57 PM by David Khorram   [ updated Feb 9, 2017, 11:18 PM by Sallar Khorram ]

 IMPORTANCE OF NFPA COMPLIANCE

Restaurant fires

Restaurant fires are a very serious and much too common problem across United Estates. Cooking accounted for almost 30% of all nonresidential fires in 2012. To combat the issue, the National Fire Protection Association created the NFPA 96 to reduce the potential for fire in commercial cooking operations. The NFPA 96 outlines preventive and operative requirements to reduce the risk of fire in commercial cooking environments.

NFPA 96

The material in the NFPA 96 covers all aspects of the commercial cooking process. It first addresses kitchen design and installation of various appliances generally required to operate a commercial restaurant. All cooking appliances need to have an exhaust hood placed above them to prevent the air in the kitchen from becoming saturated with grease and more easily combustible. Next the NFPA 96 goes over the best practices while operating a commercial kitchen. It is important to have your kitchen ventilation system operating in tune with the amount of cooking being done at any time.

Requirements

Lastly, the NFPA 96 requires that all restaurants have their exhaust hoods, ductwork and grease filters regularly inspected and cleaned. Before long grease will begin to build up in the restaurant ventilation system and cause it to work less efficiently. The grease buildup also presents a fire hazard because the grease can easily be ignited.

WHEN YOU DON’T CLEAN YOUR KITCHEN DUCT

Tips to Prevent Restaurant Fires

When come to  restaurant kitchen, a loud and chaotic environment full of activity comes to mind. Bear in mind , It’s an exciting place to work…and it’s also a fire danger zone.

It’s estimated that 5,900 restaurant fires occur every year in the United States, resulting in over $172 million in property loss and many personal injuries.

Where do the  fires start?

The answer is simple,  right there in the kitchen. In fact, a 2011 report shows that 59% of all restaurant fires began in the kitchen cooking area.

Without a doubt, fires are one of the most dangerous threats to the health and safety of restaurant staff and patrons. However, with proper policies, training, and preventative measures, the impact of these fires can be drastically reduced – if not avoided altogether.

These are what you can do to prevent fire;

Keep It Clean

The majority of kitchen fires begin when flammable cooking material or byproducts, such as oil and grease trap , are ignited. Not only does grease build up on cooking surfaces, it can also collect bits of food and paper, increasing flammability.

Equipment and Maintenance

Fire safety is the last place to cut corners. Maintaining preventative and safety equipment could end up saving a lot of money in the long run.

Policies and Planning

Make fire safety a regular part of your training process. If every member of your kitchen staff knows what to do and where to go, you can minimize damage and injury in the event of a fire.

Think About Prevention as an Investment

A restaurant kitchen fire can risk lives, cost thousands of dollars, and bury an otherwise thriving business. This underscores how important it is to keep your equipment cleaned, maintained, inspected, and up to code.

This extends beyond just equipment – keeping staff on hand to maintain a clean kitchen, hiring a certified kitchen exhaust cleaner to ensure the hood system is properly cleaned and free of grease, and investing in a quality fire suppression system – all of these protect against the catastrophic losses that can occur in a large fire.

Restaurant fire prevention is a combination of awareness and diligence. Do everything in your power to keep your kitchen safe.

Watch this video of TGI Friday’s Grease Duct Fire in Rockefeller center. This is what happens when owner or manager neglect to clean the your ducts.

Grease builds up and it becomes extremely flammable. Too many restaurant owners wait until it’s too late to replace their grease. Don’t let that bad smell be your reminder to have your entire kitchen exhaust cleaned. By then, it’s too late. Get it done with regular service agreements by Done Right Hood and Fire Safety. Kitchen hood cleaning, grease traps, fire suppression systems, hood fabrication and more. We’re Southern California number on Kitchen Exhaust Cleaning specialists.

Effective Hood and general Cleaning Program for Restaurants Irvine

posted Sep 7, 2015, 2:25 PM by David Khorram   [ updated Mar 10, 2017, 5:53 PM by Sallar Khorram ]

Effective Hood  and general Cleaning

Being in restaurant business , you know , one does not get a second chance to make a great first impression.

suppliers , employees and  your customers

Your suppliers , employees and above all your customers perceptions of your restaurant establishment are formed before their food arrives. Making sure your restaurant environments are clean can help lead to a great experience for everyone specially customer. Customers are less likely to return to a food establishment after having a bad experience due to lack of cleanliness, dusty and dirty appearance.

Sanitizing and  removing   cross contamination

Sanitizing and completely removing the possibility of cross contamination ( coli, campylobacter and everyone’s favorite, salmonella) especially around food preparation areas should always be a primary concern for restaurant managers, owners and employees.

A restaurant that cleans and decontaminate specific areas as they become contaminated (such as food preparation surfaces, hoods, kitchen exhaust, or dining area tables and surfaces ) will maintain an upstanding appearance. During busy periods, cleanliness is more difficult to maintain and should be remedied as quickly as possible once there is a slow down of incoming customers but cleaning needs to be a constant task.

Consumers are  aware  restaurants

Restaurant cleanliness is only going to become more significant as consumers are more aware of a restaurant’s appearance, local news and internet restaurant review portals.

However it is important to note that constant spot-cleaning will only delay, not remove, the need for deep cleaning. The chicken and exterior of a food service establishment should be maintained and cleaned regularly as it is the first thing a potential customer will see. Having an unclean interior and exterior may directly affect a customers’ choice to enter the establishment and reflects badly on the business as a whole. Using an easy go-to checklist, such as the following, that covers important areas will provide as helpful reminder for cleaning or sanitizing food service areas.

Restaurant food service areas

  • Hood cleaning
  • Airduct cleaning
  • Grease trapping
  • Hood Filter Exchange
  • Mop floors
  • Wash kitchen hoods
  • Clean exhaust fans, ducts, filters
  • Wipe down tables
  • Empty grease traps
  • Hydro jetting
  • Clean and disinfect bathrooms
  • Clean sinks, mirrors, toilets and urinals
  • Disinfect critical touch points
  • Sanitize all food contact surfaces
  • Clean ovens, grills and fryers regularly
  • Wash internal and external windows
  • Dust windows, blinds, air conditioner vents, and wall hangings
  • Refill consumables, including paper products and soap

WHY HOOD STEAM CLEANING IRVINE CALIFORNIA

posted Sep 7, 2015, 1:52 PM by David Khorram   [ updated Mar 13, 2017, 4:06 PM by Sallar Khorram ]

WHY HOOD STEAM CLEANING, Experience with sense of absolute filth and the distinct bad feeling!

We had a very bad experience recently going to a local restaurant in Irvine California. We decided to write about it and let reader know what hat is hood cleaning and why is it so important for a restaurant?

We can reference mandates, fire safety stats and health risks, but We believe the best way to illustrate this point is to start with a short story .

Recently my family and I were driving around Irvine, California , we spotted a quaint little chinese or Korean restaurant which we had never noticed. We decided to be adventurous and experimental and find out see how good the food was . We are part of Locals.Best entreperneur team and we seek finding the bets palace and best businesses. The exterior was nice warm, bright and inviting so they certainly was a good welcome sign.

However, We realized we were in trouble after few minute. The problem was being greeted by smell and a sense of filth and the clear feeling that this place hadn’t been cleaned or dusted since it opened.

In Locals.Best we are committed to supporting a local businesses, we decided to give it a chance. After all, appearances can be misleading and were sure there was a perfectly logical explanation.

I am personally not picky and generally have no issues consuming things like three day old food left on a counter, but this place made my skin crawl and redefined “dirty” for me.

We simply had to leave.

I highly suggest restaurant owners read food poisoning articles in bulletin.com or just search for “Food Poisoning Cases” in Google which highlights the fact that the 10 largest cases of food poisoning was responsible for making over 1,000 people sick in 45 states. Restaurants need to maintain a certain level of cleanliness to stay in business and of course serve food safe to consume. An often overlooked area is one of the most critical to maintaining a healthy and contaminant free environment. The duct work in the kitchen.

In restaurant kitchens, whenever food is cooked, it is done under an air exhaust duct with a fan. This system is known as the hood or exhaust . The main purpose of the hood is to remove smoke, heat, grease, steam vapors and other toxic off gases from the cooking process.

Even though grease filters are installed to capture the grease from the vapor, grease can still accumulate in the hood duct work. This is why duct and hood cleaning is so important (most people use these anonymously when they are talking about cleaning kitchen hoods:
  1. Duct cleaning
  2. Hood cleaning
  3. Steam cleaning
  4. Exhaust cleaning and;
  5. vent cleaning
  6. Hood filter exchange
While there are niches and broader meanings for each term, we do not want to be too detail

In some cases, owners are unaware of the importance of frequent exhaust duct cleaning and if ignored, many serious problems, some life threatening, can and will develop over time. Just watch a couple of episodes of Restaurant Impossible. Chef Robert Irvine tries to turn around restaurants across America that are facing an impending demise if things don't improve.
Nightmares” and food safety will forever shape your view of the dining out experience.

Here are four reasons why it is imperative to set up and maintain a kitchen and vent cleaning schedule.

Best Practice

Being clean and attracting customer is a no brainier. If your restaurant is not and do not look clean. You need to change your profession or get it clean fast.

Food Safety

Bacteria such as e.coli, campylobacter and everyone’s favorite, salmonella love to throw parties on undercooked meat – and that includes chicken.

Heat Build Up

If potentially unsafe foods and fires aren’t reason enough, yet another unintended consequence from inadequate cleaning is heat build up. The result of infrequent duct cleaning is having a partially clogged, inefficient exhaust duct struggling to funnel away heat that can now build up in the kitchen. Kitchens are warm enough with grills and various elements generating heat – but when you ratchet the temperature up a degree or two, it means chilled food and ingredients are now even more susceptible to mold, fungus, and bacteria.

Fires

Since you are in a research mode, now search for “Restaurant fires due to grease” in Google. No, I don’t want to keep you awake at night thinking about this stuff but I do want to make you aware of how dangerous grease build up can be. Duct cleaning is extremely important for many reasons and the second most important is the prevention of fire.

Duct cleaning on a regular basis is vitally important to the health of patrons and the success of a restaurant. Once you purchase a duct cleaner, use it on a regular basis and you will keep both customers and employees safe and happy. Or if you choose not to do it yourself, hire a professional contractor to do so.

Benefits of Hydro Jetting

posted Aug 17, 2015, 4:46 PM by Don Safaei   [ updated Feb 9, 2017, 11:20 PM by Sallar Khorram ]

Benefits of Hydro Jetting

As a restaurant owner, it should come as no surprise that your sewer lines are quick to fill up with used cooking oil, food, and other waste products. As the overflow of these sewage lines can be a costly repair, it is important to maintain your quarterly Anaheim Hydro Jetting Services. Recognizing the best times to implement hydro jetting and the benefits of this critical service are as follows.
The best time to have your sewers serviced is when a stubborn drain needs to be unclogged and before pipe lining. Naturally, when your sewer lines are full of build up, a hydro jet can be used to help clear the pipe when the usage of liquid drain solvent and snaking have failed. Further, when lining a pipe with a protective coating to deter against leaks and corrosion, hydro jetting is necessary to provide a clean surface to seal, according to Aqua Plumbing and Air.
The benefits of this service are monumental. First and foremost, it provides a thorough cleaning of your restaurant's sewer lines. While an electric drain snake might cut through the buildup, it does not completely remove all of the blockage. This service clears solid clogs while diminishing mineral deposits and unwanted sludge.
What's more, the carefully calibrated water pressure used to clean the pipes has less damaging effects than the chemical cleaners and metal wires from other cleaning techniques. Hydro jetting will not break or soften your pipes over time. Further, as there are no chemicals used in the process, harmful toxins such as sulfuric acid and sodium hydroxide are not left in the pipes.
At Optimal Biofuels, we understand the importance of properly maintaining your sewage lines to promote the best business practices. We are proud to announce our discounted hydro jetting services when completed quarterly, along with other bundled policies. To learn more about our services, contact us today at (877) 702-3835.

Used Cooking Oil Equals Jet Fuel?

posted Aug 11, 2015, 7:32 PM by Don Safaei   [ updated Feb 9, 2017, 11:20 PM by Sallar Khorram ]

Used Cooking Oil Equals Jet Fuel?

While the development of sustainable energy has long been tested for multiple uses, the commercial sector is now being developed. Boeing, world renowned aviation manufacturer, has plans to take the cooking oil waste from China and turn it into jet fuel. As the versatility of uses for this organic waste is endless, don't hesitate to have your Los Angeles Used Cooking Oil Disposal service regularly scheduled.
While fried food is considered a delicacy in China, there is no shortage of cooking oil waste to supply the need for Boeing's venture. Boeing's latest plan, which coincides with their prior commitment of making biofuel in the Middle East, is estimated to convert 500 million gallons of waste oil, or "gutter oil" as they commonly refer to it, into jet fuel. With the help of Commercial Aircraft Corporation of China (COMAC), the new aviation facility has been presented to investors.
Ian Thomas, President of Boeing China stated “Strong and continuing teamwork between Boeing and COMAC is helping our industry make progress on environmental challenges that no single company or country can solve alone. By working together for mutual benefit, we’re finding innovative ways to support China’s aviation industry and build a sustainable future.”
The project, called China-U.S. Aviation Biofuel Pilot Project, is assumed to reduce carbon emissions by 50 to 80 percent throughout its life cycle, according to SustainaBlog. What's more, the Boeing Current Market Outlook estimated that 6,000 planes will need to be built by 2033 to keep up with demand for international and domestic travel, reinforcing the need for this sustainable fuel development.
At Optimal Biofuels, we strive to serve Southern California's used cooking oil service needs. Whether you operate a restaurant, hotel, or any other establishment that uses cooking oil, we provide a variety of services to accommodate you. We are also proud to offer complimentary used cooking oil collection in conjunction with other bundled services.
